These Coconut Water + Fresh Berry Popsicles are as festive as they are hydrating — and they take just minutes to prep!  Author Dena Norton πŸ“ Ingredients (Makes 10 popsicles): • 2.5 cups fresh berries (I used blueberries, raspberries & sliced strawberries) • 40 oz coconut water (I love Amy & Brian’s Coconut Juice) 🧊 Directions:  1. Drop berries into popsicle molds — smaller ones will fall to the bottom, bigger pieces may need a little help (a butter knife or popsicle stick works great!).  2. Pour coconut water over the berries to fill each mold.  3. Add sticks, cover, and freeze for several hours.  4. When ready to enjoy, let them sit at room temp a few minutes to easily release. Simple.   Chicken Avocado Ranch Burritos  Ingredients: 2 cups cooked shredded chicken 1 avocado, diced 1/4 cup ranch dressing 1/4 cup diced tomatoes 1/4 cup diced red onion Optional: lettuce or spinach, shredded cheese, cilantro, tortillas Instructions: In a large bowl, combine the shredded chicken, diced avocado, ranch dressing, tomatoes, and red onion. Gently stir to mix—be careful not to mash the avocado too much. Warm your tortillas slightly (microwave for 10–15 seconds or heat in a pan) to make them more pliable. Lay out each tortilla and spoon the mixture into the center. Add optional extras like shredded lettuce, cheese, or cilantro if desired. Roll up burrito-style: fold in the sides, then roll tightly from the bottom up. For a warm, toasty finish, grill or toast the wrapped burrito in a skillet for 1–2 minutes per side until golden. Serve immediately and enjoy!
