Chicken Avocado Ranch Burritos
Ingredients:
- 2 cups cooked shredded chicken
- 1 avocado, diced
- 1/4 cup ranch dressing
- 1/4 cup diced tomatoes
- 1/4 cup diced red onion
- Optional: lettuce or spinach, shredded cheese, cilantro, tortillas
Instructions:
- In a large bowl, combine the shredded chicken, diced avocado, ranch dressing, tomatoes, and red onion. Gently stir to mix—be careful not to mash the avocado too much.
- Warm your tortillas slightly (microwave for 10–15 seconds or heat in a pan) to make them more pliable.
- Lay out each tortilla and spoon the mixture into the center.
- Add optional extras like shredded lettuce, cheese, or cilantro if desired.
- Roll up burrito-style: fold in the sides, then roll tightly from the bottom up.
- For a warm, toasty finish, grill or toast the wrapped burrito in a skillet for 1–2 minutes per side until golden.
