these chewy chocolate chip granola bars are gluten free, dairy free, and refined sugar free, and so easy to make!
ingredients:
•2 ¼ cups gluten free quick oats
•1 cup gluten free rice cereal
•¼ cup + 2 tbsp ground flaxseed
•1/2 cup chocolate chips
•1/2 tsp salt
•1/4 cup + 2 tbsp nut or seed butter of choice (almond, peanut, sunflower seed, etc.)
•1/2 cup unsweetened applesauce
•1/2 cup honey
•2 tbsp water
•1 tsp pure vanilla extract
instructions:
1. add the nut/seed butter, honey, applesauce, water, vanilla, and salt to a large bowl and mix until smooth. next add in the oats, rice cereal, ground flaxseed, and chocolate chips and mix until well combined.
2. once mixed, pour the mixture into an 8x8 square pan lined with parchment paper and gently press the mixture down using a separate sheet of parchment paper.
3. bake at 350°F for 25 -30 minutes, or until firm and lightly browned. once baked, remove from the oven and cool completely in the pan.
4. once cooled, slice into bars and enjoy!
