 Raspberry Coconut Bars 



recipe below 👇 


1 3/4 cup desiccated coconut

1 cup frozen raspberries

2 tsp vanilla extract

4 tbsp maple syrup

1 2/3 cups good quality dark chocolate (or chocolate of choice) 


Line a loaf tin with baking paper


Add the coconut, raspberries, vanilla and maple syrup to a food processor and pulse for a few seconds until it starts to come together


Press into the loaf tin and place in the freezer until solid (1-2 hours) - slice into bars and place back in the freezer while you melt the chocolate 


Coat each bar in chocolate (use 2 forks to do this!) place back in the freezer to set 🫶🏻
