Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce

Ingredients




Chicken & Bowl



  • 2 boneless, skinless chicken breasts
  • 2 cups (200g) broccoli florets
  • 2 tbsp olive oil (divided)
  • Salt & black pepper, to taste
  • ¼ tsp paprika
  • Cooked rice or quinoa (for serving)




Creamy Garlic Sauce



  • ½ cup (120 ml) plain Greek yogurt
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh parsley
  • Salt & pepper, to taste
  • Optional: 1–2 tbsp water or milk (to thin sauce if needed)






Instructions




1️⃣ Prepare the Chicken



  1. Pat chicken breasts dry.
  2. Season both sides with salt, pepper, paprika, and 1 tbsp olive oil.
  3. Grill on a preheated grill pan or outdoor grill over medium heat for 5–6 minutes per side, until fully cooked (internal temp 165°F).
  4. Remove from heat and let rest 5 minutes, then slice.






2️⃣ Cook the Broccoli



  • Stovetop:
    Heat remaining 1 tbsp olive oil in a skillet over medium heat. Add broccoli, season lightly with salt & pepper, and sauté for 5–7 minutes until tender-crisp.
  • OR Steamed:
    Steam broccoli for 4–5 minutes until bright green and tender.






3️⃣ Make the Creamy Garlic Sauce



In a small bowl, whisk together:


  • Greek yogurt
  • Minced garlic
  • Lemon juice
  • Parsley
  • Salt & pepper



Add water or milk a little at a time if you want a drizzle-friendly consistency.





4️⃣ Assemble the Bowls



  1. Add rice or quinoa to the bottom of each bowl.
  2. Top with broccoli and sliced grilled chicken.
  3. Drizzle generously with creamy garlic sauce.
  4. Optional garnish: extra parsley or cracked black pepper.
