Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce

Ingredients
Chicken & Bowl
- 2 boneless, skinless chicken breasts
- 2 cups (200g) broccoli florets
- 2 tbsp olive oil (divided)
- Salt & black pepper, to taste
- ¼ tsp paprika
- Cooked rice or quinoa (for serving)
Creamy Garlic Sauce
- ½ cup (120 ml) plain Greek yogurt
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 1 tbsp chopped fresh parsley
- Salt & pepper, to taste
- Optional: 1–2 tbsp water or milk (to thin sauce if needed)
Instructions
1️⃣ Prepare the Chicken
- Pat chicken breasts dry.
- Season both sides with salt, pepper, paprika, and 1 tbsp olive oil.
- Grill on a preheated grill pan or outdoor grill over medium heat for 5–6 minutes per side, until fully cooked (internal temp 165°F).
- Remove from heat and let rest 5 minutes, then slice.
2️⃣ Cook the Broccoli
- Stovetop:
Heat remaining 1 tbsp olive oil in a skillet over medium heat. Add broccoli, season lightly with salt & pepper, and sauté for 5–7 minutes until tender-crisp. - OR Steamed:
Steam broccoli for 4–5 minutes until bright green and tender.
3️⃣ Make the Creamy Garlic Sauce
In a small bowl, whisk together:
- Greek yogurt
- Minced garlic
- Lemon juice
- Parsley
- Salt & pepper
Add water or milk a little at a time if you want a drizzle-friendly consistency.
4️⃣ Assemble the Bowls
- Add rice or quinoa to the bottom of each bowl.
- Top with broccoli and sliced grilled chicken.
- Drizzle generously with creamy garlic sauce.
- Optional garnish: extra parsley or cracked black pepper.
