Homemade Samoas Cookies

Ingredients

For the Cookies

  • 1 1/2 cups almond flour (or oat flour, see below)
  • 1/4 cup pure maple syrup (or honey)
  • 1/4 tsp salt

For the Caramel

  • 1/4 cup + 2 tbsp tahini (or other nut/seed butter, see below)
  • 1/4 cup pure maple syrup (or honey)
  • 3/4 cup shredded unsweetened coconut 
  • 1/4 tsp salt

For the Topping

  • 3/4 cup dark or semi-sweet chocolate chips (I use dairy free and refined sugar free)
  • 1 tsp coconut oil (optional)

Instructions

  • Preheat the oven to 350°F and line a large baking tray with parchment paper. While the oven preheats, mix together the cookie ingredients in a small dish. If the dough is too sticky, add more flour. If the dough is too dry, add more sweetener.
  • Once the dough is mixed, divide it into 12 evenly sized balls. Place each ball on the lined baking tray and flatten using your fingers or the palms of your hand. Then create a hole in the center of each cookie using your fingers or a butter knife.
  • Bake the cookies for 10-15 minutes, until lightly browned. Don't overbake! Once the cookies are done baking, remove them from the oven and let them cool completely.
  • While the cookies are cooling, toast the coconut: add the shredded coconut to a baking tray lined with parchment paper and bake for 5 minutes, until the coconut is lightly toasted. Set aside.
  • Next, prepare the caramel: combine the tahini, maple syrup, and salt together and heat (in the microwave or on the stovetop) until the mixture begins to bubble. Remove from the heat once bubbly and stir in the toasted coconut.
  • Once the cookie are cooled, spread the caramel mixture over the top of each cookie. Next, melt together the chocolate and the coconut oil (in the microwave or using the double boiler method), stirring often so the chocolate doesn't burn. The coconut oil is optional, but it helps to thin the chocolate a bit.
  • Once the chocolate is melted, dip the bottom of each cookie in the melted chocolate then place the cookies on a tray lined with parchment paper. Drizzle the cookies with any remaining melted chocolate. 
  • Place cookies in the refrigerator for 15-30 minutes, until the chocolate is hardened. Once the chocolate has hardened, enjoy!
