  Homemade Samoas Cookies SERVINGS  12 PREP TIME  30 minutes   mins COOK TIME  15 minutes   mins Ingredients For the Cookies 1 1/2   cups   almond flour   (or oat flour, see below) 1/4   cup   pure maple syrup   (or honey) 1/4   tsp   salt For the Caramel 1/4 cup   + 2 tbsp   tahini   (or other nut/seed butter, see below) 1/4   cup   pure maple syrup   (or honey) 3/4   cup   shredded unsweetened coconut  1/4   tsp   salt For the Topping 3/4   cup   dark or semi-sweet chocolate chips   (I use dairy free and refined sugar free) 1   tsp   coconut oil   (optional) Instructions Preheat the oven to 350°F and line a large baking tray with parchment paper. Easy Chocolate Chip Granola Bars

these chewy chocolate chip granola bars are gluten free, dairy free, and refined sugar free, and so easy to make! ingredients: •2 ¼ cups gluten free quick oats •1 cup gluten free rice cereal •¼ cup + 2 tbsp ground flaxseed •1/2 cup chocolate chips •1/2 tsp salt •1/4 cup + 2 tbsp nut or seed butter of choice (almond, peanut, sunflower seed, etc.) •1/2 cup unsweetened applesauce  •1/2 cup honey •2 tbsp water •1 tsp pure vanilla extract instructions: 1. add the nut/seed butter, honey, applesauce, water, vanilla, and salt to a large bowl and mix until smooth. next add in the oats, rice cereal, ground flaxseed, and chocolate chips and mix until well combined. 2. once mixed, pour the mixture into an 8x8 square pan lined with parchment paper and gently press the mixture down using a separate sheet of parchment paper. 3. bake at 350°F for 25 -30 minutes, or until firm and lightly browned. once baked, remove from the oven and cool completely in the pan. 4. once cooled, slice into bars and e...

  Southwestern salad tostada✨ For the Tostadas:  2 Tbsp Avocado Oil 6 Corn Tortillas Kosher Salt 2 Tbsp Shredded Mexican Cheese For the Dressing: 1/2 Cup Light Sour Cream 2 Limes, juice 1/4 Cup Cilantro 1 Clove Garlic 1/4 tsp Salt 1/4 tsp Pepper For the Salad: 4 Cups Romaine, sliced thin (~1 Heart of Romaine) 3/4 Cup Cherry Tomatoes, sliced 1/2 of an Avocado, diced 1/2 Cup Jicama, diced small 1/2 Cup Black Beans 1/2 Cup Corn (frozen and thawed or canned) 1/4 Cup Shredded Mexican Cheese Kosher Salt & Pepper On Top:  Shredded Mexican Cheese Avocado, sliced Maldon Salt (optional) 🌱Vegan Modification: Sub in avocado instead of sour cream in the dressing (you may need to add a bit of water to thin it out) and leave out the cheese in the salad and on the tostadas  1️⃣ Preheat oven to 400°F (convection if you have it) and drizzle 2 Tbsp avocado oil on a large baking sheet 2️⃣ Rub both sides of each tortilla in the oil and sprinkle with salt 3️⃣ Convection bake for 6 mi...

Opportunity....what if

The Opportunity! There are so many things in life that can affect us.  The air we breath, stress, getting older, managing change...there is so much more.  One thing I've realized is that no matter what I do, I must embrace what comes my way.  I have found it a little easier through help aides that can simplify life.  I'm so thankful that through the last 6 1/2 years that I have found a way to maneuver through the obstacles that we counter.  And I'm still learning... Are you in a place where it just seems like you know you need something but not sure what?  I have been there.  And I'm continuing to adjust as I'm aging.  It's crazy how life goes by so quickly.  We blink and that second is gone.  We cannot get it back.  But what if we could change and be better for the days to come.  Would you be open to listening? Raspberry Coconut Bars
